A Container Garden Recipe

 
A fun easy recipe to enjoy once you have grown the veggies in your container garden is squash boats.  Squash boats make use of the squash, peppers, and onions that you grew in your container garden.

Here are the ingredients needed to prepare squash boats.

Several nice sized yellow squash.
Green bell pepper
Red bell pepper
Green onions
Mayonnaise
Butter
Shredded cheddar cheese

Be sure to include your child in the creation of this dish.  They can pick the items from the garden, wash the vegetables, and depending on their ability, help cut the veggies.

Wash the squash, cut off the ends, and place them in a large boiler and cover with water.  Boil until the squash are beginning to soften, but still holding together well.  While the squash is cooking, chop the green bell pepper, red bell pepper and green onions into small pieces. 

Then you will want to sauté the peppers and onions in a skillet, once these are softened set aside.  When squash are ready cut them horizontally and scoop out the insides leaving the hull for a boat.  Mix the squash with the peppers onions, about a cup of shredded cheese and enough mayonnaise to create a paste.  Scoop this mixture into the squash boats and top with more cheese.  Bake until golden brown and bubbly in a 350-degree oven approximately 25 minutes.
